We Fed 4,000 People in Three Days — Here Is What We Learned About Catering
A few years ago we got a call from a local manufacturing company here in the Central Valley. They needed catering for a large event. When we found out the headcount we did not flinch. We said yes, we figured out the logistics, loaded up our entire setup, and showed up on site ready to work.
Three days. Twelve hours a day. Four thousand people fed.
"Three days. Twelve hours a day. Four thousand people fed. It was one of the best experiences we have ever had. By the time we packed up on day three Afeef and I looked at each other and said the same thing — we would do it again tomorrow."
It was one of the best experiences we have ever had. Exhausting, demanding, and completely worth it. By the time we packed up on day three Afeef and I looked at each other and said the same thing — we would do it again tomorrow.
That event taught us a lot. Not just about logistics and scale but about what it means to feed people well at any size. Whether we are setting up for fifteen people at a house brunch or cooking on site for thousands of employees at a corporate event the principles are exactly the same. Fresh food. Clean setup. Show up prepared. Take care of people.
Here is everything we learned.
Size is never the problem
We have catered events for 10 people and for 4,000 people. The number itself is never what makes an event challenging. What makes it challenging is lack of preparation — and that is entirely solvable.
When you call us for a large event we ask the right questions upfront. How many people. What time. What location. What type of setup works best for your space. Once we have that information we build a plan that accounts for everything — food volume, staffing, equipment, timing, and flow. By the time the event starts there are no surprises because we have already solved every problem on paper before we show up.
There is no minimum order for our catering. Whether you need lunch for a small team or a full on site setup for a large workforce we can make it happen.
The setups that work best for large events
For corporate and private events our two most popular options are family style platters and assembled bowls. Both work exceptionally well at scale.
Family style means we set up a full spread — hummus, falafel, shawarma, gyro, salads, pita, sauces — and people come up and fill their plates with what they want. It is social, relaxed, and incredibly efficient for large groups. People move through the line quickly, they get exactly what they want, and the setup looks impressive.
Assembled bowls are our other go to for large events. We build each bowl individually — base of rice or salad, protein of your choice, hummus, sauce, pita on the side. Employees or guests walk up, grab their bowl, and they are done in seconds. No backup, no confusion, no mess. For a manufacturing company feeding thousands of workers on a tight break schedule this format is ideal.
For the three day event we ran both. Platters for the communal setup, bowls for the quick grab and go lines. It worked perfectly.
What we bring so you do not have to think about anything
When we do on site catering we bring everything. Serving equipment, plates, utensils, drinks, setup. You do not need to coordinate with multiple vendors or worry about whether you have enough forks. We handle it. You focus on your event and we focus on the food.
For larger events we set up our full kitchen on site so everything is cooked fresh and served hot. That is not something every catering company offers. A lot of places cook offsite and transport. We prefer to be there because fresh food is better food and your guests deserve the real experience.
The one thing we always tell clients planning a large event
Do not underestimate your people. When the food is good — really good, made fresh, clean, flavorful — people eat more than you expect. We have seen it at every single large event we have done. Plan for a little more than you think you need. With Mediterranean food there are never bad leftovers anyway.
Also give us as much lead time as you can. For most events 24 hours is fine. For larger events — anything over a few hundred people — 48 to 72 hours lets us prepare everything properly and make sure the food is as good as it always is. We never want to rush something that deserves to be done right.
We are here for your next event
Corporate lunches. Private parties. House brunches. Large scale on site events. We have done it all and we love every bit of it. There is something deeply satisfying about feeding a large group of people well — watching them come back for seconds, seeing them energized and happy, knowing the food made their day a little better.
That manufacturing company called us back. That is the best thing we can say.
If you are planning an event — big or small — reach out. We will take care of you.
